SUPER Beet Brownies for a rainy day or any day

It's raining, it's pouring...I want a brownie.


Or several brownies...
 

But I don't want just any brownie, I want a Super Brownie! A brownie that nourishes my body, rather than something I need to work off later.

But can it be? Is that possible? 
Of course it is!

Ladies and gentleman, I proudly present the: 

SUPERFOOD BEET BROWNIE! 

This brownie is jam-packed with essential nutrients, vitamins, minerals, protein, good fat and energy-boosting ingredients. Here are a few highlights from the ingredient list:

AMARANTH: gluten-free, superfood, high in lysine, complete vegan protein, packed with vitamins, minerals and amino acids, pseudo-grain

MILLET: gluten-free, superfood, the only alkaline grain, complete vegan protein, vitamins and minerals and amino acids

MACA POWDER: gluten-free, superfood, energy-boosting, hormone-regulating, mood-enhancing, strength-boosting, stamina-enhancing

CHIA: gluten-free, superfood, complete protein, rich in EFAs, magnesium, calcium, phosphorous and manganese, calming, energy-boosting, mood-enhancing

And on a personal note, most desserts make me shaky (my body doesn't process sugar very well) but these naturally-sweetened brownies made me feel great! 

Don't skip the vegan icing recipe either! 

My recipe for Cosmic Chocolate Icing (its out of this world) is below 
and is possibly the best icing I've ever made!


Super(food) Beet Brownies
Makes a 9" square pan of brownies

  • 1 cup finely grated Chiogga (candy cane) beet (don't have Beets? try Zucchini!)
  • 2/3 cup cocoa powder
  • 1/3 cup + 2 pitted dates
  • 2 dashes coarse sea salt
  • 1 1/2 cup filtered water
  • 1 tsp baking powder
  • 2 tsp baking soda
  • squeeze lemon
  • 2 tbsp maca powder
  • 2 tbsp chia seeds
  • 5-6 tsp soy-free vegenaise
  • 1/3 cup pear sauce
  • 1/4 cup millet flour
  • 1/4 amaranth flour
Preheat oven to 365F.

Pulse then blend all ingredients except amaranth and millet flour in food processor until smooth. Stop to scrape down sides and continue to blend. Add flours and pulse then blend  till smooth, stopping to scrape down the sides. Taste! Add extra dates and blend if not sweet enough. Add more cocoa if not chocolatey enough.

Pour batter into a 9 inch square baking pan lined with parchment paper. Spread out evenly. Bake in center of preheated oven until crust forms and surface is not too soft to touch, about 25-30 minutes. Brownies will continue to set as the batch cools down. Cool thoroughly (you can refrigerate them after 10 minutes on the stove-top) then ice the brownies with Cosmic Chocolate Icing (recipe follows).



Cosmic Chocolate Icing (its out of this world)
  • 1/3 cup pitted dates
  • 1/4 cup + 2 tbsp cocoa powder
  • small squeeze lemon juice or dash of unsweetened rice vinegar
  • 1/2 tsp vanilla extract
  • 1/2 tsp chocolate extract
  • 1/3 cup pear sauce
  • dash coarse sea salt
  • a little over 1/3 cup hot water
  • 2.5 tsp vegenaise
  • 1 tsp baking soda
  • 1 tsp baking powder

Pulse then blend all ingredients until very smooth in food processor, this will take several minutes. Stop occasionally to scrape down sides of processor and then continue blending.

Taste! Add extra dates if not sweet enough, and more cocoa if not chocolatey enough and continue blending. Once satisfied with taste and texture (should be like pudding and smooth) transfer to  a bowl and refrigerate until ready to use (it will firm slightly in the fridge). Once the brownies are cool, ice with the icing.
